The home of ‘octaphilosophy’ is Singapore’s premier restaurant

 

Art and philosophy play primary roles in Taiwanese chef André Chiang’s eponymous 30-seat restaurant in a 19th-century terrace house in Singapore’s historic China Town. They are evident in the intimate interiors punctuated by antler lampshades, Chiang’s hand-crafted clay figurines and Christofle organic-formed crockery – and of course, the exquisitely presented dégustation menu with dishes containing no more than a handful of ingredients each.
The frequently changing Mediterranean-influenced menu (cryptically presented to diners in a small booklet) orbits around ‘octaphilosophy’ – what Chiang deems to be the characteristics of his gastronomy: Unique, Texture, Memory, Pure, Terroir, Salt, South, and Artisan.

Salt may be represented by an oyster with tiny green sea grapes and slightly sweet foam of a Granny Smith apple; Texture could be squid risotto with cauliflower purée, the grain-sized squid pieces standing in for the rice meticulously chopped each morning; while Raw could be cold-pressed herb coulis with smoked Bouchot mussel sprinkled with delicate wild herbs and flowers – all as delectable as octaphilosophy is difficult to define. Teamed with warm, proficient service and an on-hand sommelier serving natural wines from little-known artisanal vineyards, this is fine dining at its very finest.
